Orange Quick Bread
|Butter||1⁄4 Cup (4 tbs), softened|
|Packed brown sugar||1⁄4 Cup (4 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Orange juice||1⁄2 Cup (8 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Orange rind||1 Tablespoon, grated|
Preheat oven to 350 degrees.
Grease and flour 5 x 9-inch loaf pan.
Cream butter, brown sugar and sugar in mixer bowl until light and fluffy.
Beat in eggs 1 at a time.
Add orange juice and vanilla; mix well.
Combine flour, baking powder, orange rind, coriander and salt in small bowl.
Add to creamed mixture; mix just until moistened.
Spoon into prepared pan.
Bake for 45 to 60 minutes or just until top springs back when lightly touched.
Cool in pan for 5 minutes.
Loosen edges with knife and remove to wire rack to cool slightly.
