Holiday Date Nut Bread
|Boiling water||1 Cup (16 tbs)|
|Baking soda||1 1⁄2 Teaspoon|
|Raisins||1 Cup (16 tbs)|
|Dates||1 Cup (16 tbs), chopped|
|Sugar||1 Cup (16 tbs)|
|Flour||2 Cup (32 tbs)|
|Chopped nuts||1 Cup (16 tbs)|
Add boiling water and soda to raisins and dates in bowl; let cool.
In second bowl beat eggs, sugar, and vanilla until well blended.
Stir in flour, alternately, with cooled fruit mixture just until blended; stir in nuts.
Turn into 2 well-greased 7x3 inch loaf pans.
Bake in preheated 325 degree oven for 60-70 minutes or until pick inserted in center comes out clean.
Cool in pan on rack for 15 minutes; remove from pan.
Store overnight before serving.
