Zucchini Nut Bread

Ingredients
  Eggs 3
  Vegetable oil 1 Cup (16 tbs)
  Sugar 2 1⁄2 Cup (40 tbs)
  Zucchini 2 Cup (32 tbs), grated
  Vanilla extract 3 Tablespoon
  Baking soda 1 Teaspoon
  Baking powder 1 Teaspoon
  Nutmeg 1 Teaspoon
  Cinnamon 1 Tablespoon
  Flour 3 Cup (48 tbs)
  Nuts 1 Cup (16 tbs), chopped
Directions

Preheat oven to 325°.
Grease loaf pans.
Beat eggs; add oil, sugar, zucchini, and vanilla.
Mix well.
Add remaining ingredients; mix well.
Pour into prepared loaf pans.
Bake for 1 hour.
Great for breakfast or finger sandwiches with cream cheese.
