Cranberry Nut Bread
|All purpose flour||2 Cup (32 tbs)|
|Sugar||1 Cup (16 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Orange juice||3⁄4 Cup (12 tbs)|
|Grated orange peel||1 Tablespoon|
|Egg||1 , well beaten|
|Cranberries||1 1⁄2 Cup (24 tbs), coarsely chopped (Ocean Spray, Fresh / Frozen)|
|Chopped nuts||1⁄2 Cup (8 tbs)|
Preheat oven to 350 degrees.
In a bowl, mix together flour, sugar, baking powder, salt, and baking soda.
Stir in orange juice, orange peel, shortening, and egg.
Mix until well-blended.
Stir in cranberries and nuts.
Turn into a 9x5-inch loaf pan, greased on bottom only.
Bake for 55 minutes or until toothpick inserted in center comes out clean.
Cool on a rack 15 minutes; remove from pan.
