Brown Bread Ice Cream

Ingredients
  Wholemeal breadcrumbs 6 Ounce (Use 175 Gram, Fresh)
  Finely chopped walnuts 1 Ounce (25 Gram)
  Caster sugar 2 Ounce (60 Gram Superfine Variety)
  Ground nutmeg 1⁄2 Teaspoon
  Finely grated orange rind 1 Teaspoon
  Low fat natural yogurt 16 Fluid Ounce (450 Milliliter, Unsweetened Variety)
  Egg whites 2 Large
To decorate:
  Walnut halves 1 Tablespoon
  Orange slices 5
  Fresh mint leaves 8
Directions

MAKING
1)Preheat the broiler to medium heat.
2)In a bowl, mix together walnuts, breadcrumbs and sugar. Transfer this mixture into a grill or broiler pan and spread it evenly on the foil in it.
3)Either grill or broil it for 5 minutes until it becomes brown and crisp. Ensure that you remove from heat before the sugar burns. Let cool.
4)Now transfer into mixing bowl and add in orange rind, yogurt and nutmeg. Mix well.
5)In another bowl, whisk eggs whites until peaks appear. Fold the egg white into the breadcrumb mixture gradually.
6)Take mini basins, 4 in number and transfer the mixture into these.
7)Smoothen the surface and refrigerate for 90 minutes until firm to touch.

SERVING
8)Ease out the bread from mold by immersing mold base in hot water for a few seconds.
9)Transfer onto serving plates and serve immediately garnished with walnut halves, mint leaves and orange slices.
