Date Nut Bread
|Dates||1 Cup (16 tbs), halved|
|Boiling water||3⁄4 Cup (12 tbs)|
|Packed brown sugar/Granulated sugar||3⁄4 Cup (12 tbs)|
|Grated orange peel||1 Tablespoon|
|Shortening||1⁄4 Cup (4 tbs)|
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Chopped nuts||1⁄2 Cup (8 tbs)|
In mixing bowl, combine dates, soda and water.
Let stand about 10 minutes.
Mix sugar, peel, shortening and egg.
Blend in date mixture, then flour, salt and nuts.
Spread batter in 8x4- or 9x5-in loaf baking dish lined on bottom with wax paper.
Shield ends of loaf with 2-in wide strips of foil, covering 1 in of batter and molding remainder around handles of dish.
Center loaf dish on inverted saucer in oven.
Microwave at 50% (Medium) 8 minutes, rotating 1/4 turn every 2 minutes.
Increase power to High.
Microwave 2 to 6 minutes.
If using clear glass dish, check for doneness by looking through bottom.
No unbaked batter should appear in center.
Let stand 5 to 10 minutes before removing from dish.
