Mantou (Steamed Bread)
|White flour||1 Pound (450 Grams)|
|Warm water||1⁄3 Pint (200 Milliliter)|
|Fresh yeast/1 1/2 teaspoons dried yeast||1⁄2 Ounce (15 Grams)|
Mix the sugar, warm water and yeast in a bowl and leave in a warm place for 10 minutes.
By that time it should have a foamy head.
Put the flour in a large bowl and make a well in the center.
Pour in the yeast mixture and gradually work in the liquid, until it has become a firm dough.
Add 1 teaspoon more water if necessary.
Knead the dough for about 10 minutes until smooth, then cover with a cloth and leave in a warm place to rise for 2 hours.
Roll into a cylinder and cut into 20 slices.
Fold each portion into a flat bottomed ball, and set to rise for another 30 minutes.
Place each bun on either a cloth or grease proof paper in the steamer, in a single layer, and steam for 20 minutes.
