Honey Fig Nut Bread
|Egg||1 , beaten|
|Honey||1⁄2 Cup (8 tbs)|
|Milk||1 Cup (16 tbs)|
|Packaged biscuit mix||3 Cup (48 tbs)|
|Baking soda||1⁄4 Teaspoon|
|Grated lemon peel||1 Tablespoon|
|Chopped figs||1 Cup (16 tbs)|
|Coarsely chopped walnuts||1⁄2 Cup (8 tbs)|
1. Preheat oven to 350F. Grease a 9-by-5-by-3-inch loaf pan.
2. In large bowl, with wooden spoon or portable electric mixer, beat egg, honey, milk, biscuit mix, baking soda and lemon peel until well combined. Stir in figs and nuts.
3. Turn batter into prepared pan; bake 55 to 60 minutes, or until cake tester inserted in center comes out clean.
4. Let cool in pan 10 minutes. Remove from pan; cool completely on wire rack. To serve, cut into thin slices.
