MANGO BREAD

Do you like mangoes? This versatile fruit can be used in a number of recipes to whip up something real nice. This mango bread is just that. A delicious combination of a variety of ingredients and your favorite mango, all combined into one great dish. Yummy!!
Ingredients
  Unsifted flour 2 Cup (32 tbs)
  Baking soda 2 Teaspoon
  Cinnamon 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Eggs 3 , well beaten
  Sugar 1 1⁄2 Cup (24 tbs) (lessen 1/4 cup - adjust sugar as per taste)
  Chopped nuts 1⁄2 Cup (8 tbs)
  Raisins 1⁄2 Cup (8 tbs)
  Shredded coconut 1⁄2 Cup (8 tbs)
  Oil 3⁄4 Cup (12 tbs) (Wensson)
  Diced mangoes 2 Cup (32 tbs), about 1/4 inch cubes
Directions

Sift together flour, baking soda, cinnamon and salt. Make a well in center. In well add eggs, sugar, chopped nuts, raisins, coconut, oil and mangos. Mix well and bake in ungreased loaf pans at 350 degrees for 1 hour. Makes 2 loaf pans or 4 mini loaf pans. May use only raisins or only coconuts.

This is super good. However I did need to add 1/4cup of milk as well.
