1. In pie plate, with fork, beat eggs, milk, and salt until well blended.
2. Spread mustard on one side of 4 bread slices. Layer with ham and cheese. Top with remaining bread slices. Dip sandwiches in egg mixture, including edges, letting soak briefly.
3. In nonstick large skillet, melt 2 tablespoons butter over medium-low heat. Add sandwiches, in batches if necessary, and cook until browned, about 4 minutes per side, adding the remaining butter as needed.
4. To serve, cut each sandwich on diagonal in half.
