For topping
Lemon juice 1 Tablespoon (Juice Extracted From 1 Lemon)
  Honey 3 Tablespoon
Directions

Beat the oil and honey until they are blended; beat in the eggs, lemon juice, and rind.
Stir the dry ingredients together and then stir them into the first mixture.
Bake in a small oiled loaf pan (preferably smaller than 5" x 9") 'at 350°F for 45 minutes, until-a tester comes out clean.
Combine the lemon juice and honey for the topping, heating it if your honey has crystallized; pour this over the warm loaf when it comes out of the oven. You may poke several holes with a toothpick first, if you like; this will make it soak in more.
Cool for 10 minutes, then remove it from the pan.

This is a recipe from "Recipes for a Small Planet" by Ellen Buchman Ewald. The idea is for vegetarians to combine proteins for a sufficient diet.Excellent but honey and milk powder were cheap in the 70's!
