Oatmeal Bread

Ingredients
  Uncooked oatmeal 1 Cup (16 tbs)
  Milk 1 Cup (16 tbs), scalded
  Boiling water 1⁄2 Cup (8 tbs)
  Shortening 1⁄3 Cup (5.33 tbs) (Bacon Drippings Are Good)
  Firmly packed brown sugar 1⁄2 Cup (8 tbs)
  Salt 2 Teaspoon
  Dry yeast 1⁄2 Ounce (2 Packages)
  Warm water 1⁄2 Cup (8 tbs)
  Sifted flour 5 Cup (80 tbs)
Directions

Put oatmeal in large bowl, stir in milk and boiling water.
Add shortening, sugar and salt.
Let stand until lukewarm.
Sprinkle yeast into 1/2 cup of warm water.
Stir until dissolved.
Stir into oatmeal mixture, add 1/2 the flour, mix until smooth.
Add remaining flour, a little at a time.
Mix until dough leaves side of bowl.
Turn out on board and knead 7 minutes.
Place dough in greased bowl.
Cover with damp cloth and let rise 1 1/2 hours.
Knead and shape into loaves.
Bake at 400° for 10 minutes.
Reduce heat to 350°, bake 40 minutes.
