Prune Bread Custard
|Enriched white bread slice||2 , cut into cubes|
|Skim milk||1 Cup (16 tbs)|
|Eggs||2 Medium, beaten|
|Prune juice||1⁄3 Cup (5.33 tbs)|
|Vanilla extract||1 Teaspoon|
|Dried prunes||4 Medium, pitted, diced|
Place half the bread cubes in each of 2 individual casseroles.
Combine milk, eggs, prune juice, vanilla, and salt in a medium bowl.
Divide evenly and pour over bread.
Top each casserole with 1/2 of the diced prunes.
Sprinkle with cinnamon.
Bake at 350°F.
about 45 minutes or until pudding is brown and knife inserted near center comes out clean.
