Prune Bread Custard

Ingredients
  Enriched white bread slice 2 , cut into cubes
  Skim milk 1 Cup (16 tbs)
  Eggs 2 Medium, beaten
  Prune juice 1⁄3 Cup (5.33 tbs)
  Vanilla extract 1 Teaspoon
  Salt 1 Dash
  Dried prunes 4 Medium, pitted, diced
  Cinnamon To Taste
Directions

Place half the bread cubes in each of 2 individual casseroles.
Combine milk, eggs, prune juice, vanilla, and salt in a medium bowl.
Divide evenly and pour over bread.
Top each casserole with 1/2 of the diced prunes.
Sprinkle with cinnamon.
Bake at 350°F.
about 45 minutes or until pudding is brown and knife inserted near center comes out clean.
