Spiced Pumpkin Bread
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Granulated sugar||1⁄4 Cup (4 tbs)|
|Baking powder||1 Teaspoon|
|Baking soda||1 Teaspoon|
|Pumpkin pie spice||2 Teaspoon|
|Canned pumpkin||1 Cup (16 tbs)|
|Vegetable oil||2⁄3 Cup (10.67 tbs)|
|Nuts||1⁄3 Cup (5.33 tbs), finley chopped|
Line bottom of 8 inch by 4 inch microproof loaf pan with wax paper.
In medium mixing bowl, combine all ingredients.
Beat at low speed of electric mixer until moistened.
Beat at high speed for 1 minute, scraping bowl occasionally.
Spread batter evenly into prepared pan.
Shield ends of pan with 2 inch strips of foil.
Microwave on Power 5 for 9 minutes, rotating dish after half the time.
Microwave on HI Power for 6 to 7 minutes, or until center springs back when touched lightly and no uncooked batter remains on the bottom.
Let stand on counter for 5 to 10 minutes before removing from pan.
Cool before slicing.
