Mixed Grain Bread Sd
|Stock||3 1⁄2 Cup (56 tbs) (Warm)|
|Baking yeast||2 Tablespoon|
|Sourdough starter||1 Cup (16 tbs)|
|Rolled oats||1 1⁄2 Cup (24 tbs)|
|Molasses||1⁄2 Cup (8 tbs)|
|Cornmeal||1 Cup (16 tbs)|
|Rye flour||1 Cup (16 tbs)|
|Wheat germ||1 Cup (16 tbs)|
|Soy flour||1 Cup (16 tbs)|
|Milk powder||3⁄4 Cup (12 tbs) (Use 1 Cup Instant Milk Powder)|
|Whole wheat flour||5 Cup (80 tbs)|
Dissolve the yeast in the warm stock. Add the starter, oats, salt, oil, and molasses; let the mixture stand 5-10 minutes until the oats are softened.
Stir the grains together and add to the liquid gradually. You may want to add more whole wheat flour if the dough is sticky, just be sure to add 2 tablespoons of milk powder (about 3 tablespoons instant) for each cup of extra whole wheat flour.
Knead until smooth and elastic, let rise until double. Shape into loaves, place in oiled pans, and let rise again. You may make 3 large loaves instead of 4 small.
Bake at 350°F for 35 minutes.
