Banana Orange Bread
|Sugar||1 Cup (16 tbs)|
|Cooking oil||1⁄2 Cup (8 tbs)|
|Ripe bananas||3 Large, mashed|
|Orange marmalade||1⁄4 Cup (4 tbs)|
|Eggs||2 , beaten|
|All purpose flour||1 Cup (16 tbs)|
|Whole wheat flour||1 1⁄2 Cup (24 tbs)|
|Wheat bran||1⁄2 Cup (8 tbs) (unprocessed)|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Pecans||1⁄4 Cup (4 tbs), chopped|
|Flaked coconut||1⁄4 Cup (4 tbs)|
In mixing bowl combine sugar and oil; add bananas, orange marmalade, and eggs; mix well.
Stir together flours, bran, baking powder, baking soda, and salt; stir into banana mixture.
Stir in pecans and coconut.
Divide batter into 5 clean, greased 10 to 11-ounce soup cans.
Bake in 325° oven about 40 minutes or till done.(Or, pour batter into 2 greased 7 1/2x3 1/2x2-inch loaf pans Bake in 325° oven about 55 minutes or till done.)
