Banana Fig Bread
|All purpose flour||1 3⁄4 Cup (28 tbs)|
|Baking powder||1 Tablespoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Butter/Margarine||1⁄3 Cup (5.33 tbs)|
|Banana||3 Medium, mashed (about 1 cup)|
|Orange rind||1 Teaspoon, grated|
|Figs||1⁄4 Cup (4 tbs), finely chopped (dried)|
Preheat oven to 350°.
Into large bowl sift together flour and baking powder.
In small bowl beat sugar and butter together until creamy.
Add eggs and beat until well blended.
Add egg mixture to dry ingredients.
Stir just until smooth.
Add bananas, orange rind, and figs; stir again.
Pour into greased loaf pan.
Bake 45 minutes or until firmly set when lightly touched on center top.
Cool on rack.
Remove from pan after 10 minutes.
