Christmas Orange Bread
|Shortening||1⁄2 Cup (8 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Bananas||1⁄2 Cup (8 tbs), mashed|
|Orange juice||1⁄2 Cup (8 tbs)|
|Flour||2 1⁄2 Cup (40 tbs)|
|Baking powder||4 Teaspoon|
|Fruit||1 1⁄2 Cup (24 tbs), candied|
|Raisins||1⁄4 Cup (4 tbs)|
|Nuts||3⁄4 Cup (12 tbs), chopped|
Cream the shortening in a mixing bowl.
Add the sugar and beat until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Combine bananas and orange juice.
Sift the flour with baking powder and salt and mix in the candied fruit, raisins and nuts.
Add to creamed mixture alternately with banana mixture and pour into greased and waxed paper-lined 9 x 5 x 3-inch loaf pan.
Bake at 350 degrees for 1 hour or until done.
Cool for about 20 minutes, then turn out on a rack.
