Orange Date Nut Bread
|Boiling water||1⁄2 Cup (8 tbs)|
|Dates||1 Cup (16 tbs)|
|Sugar||1 Cup (16 tbs)|
|Butter||1 Tablespoon, melted|
|Egg||1 , beaten|
|All purpose flour||2 Cup (32 tbs)|
|Baking powder||1 Teaspoon|
|Pecans||1 Cup (16 tbs), chopped|
Squeeze juice from orange and add boiling water to make 1 cup liquid.
Cut orange rind into thin 1/2 inch pieces.
Place cut rind and dates in blender.
Process at High 10 seconds.
Combine liquid, orange rind and dates, sugar, butter, and egg.
Sift flour, baking powder, soda, and salt together.
Add to liquid mixture.
Combine well and add nuts.
Pour into greased 9- or 10-inch micro wave tube pan or casserole dish with glass in center.
Microwave at HIGH 10 to 12 minutes.
Rotate baking dish 1/2 turn at 3 minute intervals.
Place directly on counter and let cool in pan 15 to 20 minutes.
