Banana Bread with Vanilla Flavoring
|Salad oil||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Eggs||2 , beaten|
|Ripe bananas||3 , mashed|
|All purpose flour||2 Cup (32 tbs)|
|Baking powder||1 Teaspoon|
|Vanilla extract||1⁄2 Teaspoon|
|Chopped nuts||1 1⁄4 Cup (20 tbs), divided|
|Firmly packed brown sugar||3 Tablespoon|
Beat oil'and sugar together in a mixing bowl.
Add eggs and banana pulp.
Combine dry ingredients.
Add dry ingredients, milk, and vanilla to the egg mixture.
Stir in 1 cup nuts.
Generously butter a 10-inch microwave fluted ring mold.
Combine remaining 1/2 cup nuts and brown sugar.
Coat the ring mold with the nut mixture.
Pour reserved batter into the prepared mold.
Microwave at MEDIUM-HIGH 11 to 13 minutes.
Let stand on counter to cool 5 minutes before removing from pan.
