Orange Date Bread Pudding
|Milk||4 Cup (64 tbs)|
|Soft bread cubes||3 Cup (48 tbs)|
|Sugar||1 Cup (16 tbs)|
|Chopped pitted dates||1 Cup (16 tbs)|
|Orange||1 (use grated rind and juice)|
|Eggs||4 , separated|
|Orange marmalade||1⁄4 Cup (4 tbs) (adjust quantity as needed)|
Scald milk and pour over bread cubes.
Add butter, 3/4 cup sugar, salt, dates, grated rinds and juices, beaten whole eggs and egg yolks.
Mix well and pour into greased 2-quart casserole and bake in preheated moderate oven (350Â°F.) for 1 1/4 hours, or until set.
Spread top with thin layer of marmalade.
Beat egg whites until foamy; gradually add remaining 1/4 cup sugar and beat until stiff.
Pile lightly on pudding.
With pudding still in pan of hot water, bake in preheated hot oven (400Â°F.) for 5 minutes.
