Apple Spice Bread
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Applesauce||3⁄4 Cup (12 tbs)|
|Eggs||2 , beaten|
|Red cooking wine||1⁄4 Cup (4 tbs)|
|All purpose flour||2 Cup (32 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Cinnamon||1 1⁄2 Teaspoon, ground|
Microwave butter in a 2 1/2-quart glass mixing bowl at HIGH 30 seconds to 1 minute.
Stir in applesauce, eggs, and red wine.
Sift together flour, sugar, cinnamon, soda, and salt.
Blend dry ingredients into applesauce mixture.
Line a 9-inch round glass baking dish with a circle cut from a paper towel.
Fill 1/2 full with batter.
Reserve remaining batter.
Microwave at HIGH 5 to 6 minutes.
Rotate dish 1/4 turn after 3 minutes.
Place baking dish directly on a counter top or wooden board.
Immediately cover bread with waxed paper.
Cool 15 to 20 minutes.
Turn bread out of pan.
Cover with baking dish.
Remaining batter may be chilled 3 to 5 days.
Use extra batter to make muffins.
Line each microwave muffin ring with paper liners, and fill 1/2 full.
Microwave at HIGH 2 minutes for 7 to 8 muffins.
