Apricot Walnut Bread

Ingredients
  Milk 1⁄4 Cup (4 tbs)
  Water 1⁄2 Cup (8 tbs)
  Chopped dried apricots 1 Cup (16 tbs)
  Orange peel 1 , grated
  Packed dark brown sugar 3⁄4 Cup (12 tbs)
  Egg 1 , beaten
  Oil 3 Tablespoon
  Walnuts 3⁄4 Cup (12 tbs), chopped
  Flour 1 1⁄2 Cup (24 tbs)
  Baking powder 1 Teaspoon
  Ground nutmeg/Mace 1⁄4 Teaspoon
  Salt 1⁄2 Teaspoon
Directions

1. Combine milk, water, dried apricots, and orange peel in a 2-quart glass bowl. Microwave, uncovered, at Time Cook (power level 10) for 2 to 3 minutes, or until mixture boils, stirring once.
2. Add brown sugar, egg, and oil to fruit mixture, beating to blend well. Stir in remaining ingredients. Pour batter into a greased loaf dish. Do not cover. Place dish on an inverted saucer in the oven.
3. Set microwave oven at Time Cook (power level 5) for 10 minutes, and then Time Cook (power level 10) for 3 minutes. If necessary, microwave at Time Cook (power level 10) an additional 3 to 7 minutes to complete baking, rotating once.
Let loaf stand 10 minutes before removing from dish. Let stand an additional 5 minutes before serving.
