|Sugar||2⁄3 Cup (10.67 tbs)|
|Ripe bananas||1 Cup (16 tbs), mashed|
|Buttermilk||1⁄4 Cup (4 tbs)|
|All purpose flour||1 1⁄4 Cup (20 tbs), sifted|
|Baking powder||1 Teaspoon|
|Whole bran||1 Cup (16 tbs)|
|Chopped dried apricots||3⁄4 Cup (12 tbs)|
|Chopped walnuts||1⁄2 Cup (8 tbs)|
Cream shortening and sugar; add eggs and beat thoroughly.
Combine bananas and buttermilk.
Sift together next 4 ingredients; add alternately with banana mixture to creamed mixture.
Stir in bran, apricots, and nuts.
Pour into greased 9x5x3-inch loaf pan.
Bake at 350° for 1 hour, or till done.
