Super Zucchini Bread
|Buttermilk/Yogurt / a combination of both||1 1⁄3 Cup (21.33 tbs)|
|Whole wheat flour||2 Cup (32 tbs)|
|Wheat germ||1⁄2 Cup (8 tbs)|
|Bran||1⁄2 Cup (8 tbs)|
|Arrowroot powder/Baking powder||4 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Sunflower seeds||1⁄2 Cup (8 tbs)|
|Raisins/Chopped dates||1⁄2 Cup (8 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
|Safflower oil||3 Teaspoon|
|Grated zucchini||1 Cup (16 tbs)|
Combine dry ingredients in a large bowl with seeds and raisins or dates.
Combine honey, oil, and buttermilk and stir into dry ingredients.
Stir in zucchini.
Pour into a greased and floured 9 x 5-inch loaf pan.
Bake at 325° about 1 hour and 25 minutes, or until a toothpick inserted in center of loaf comes out clean.
