Banana Nut Bread
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Baking soda||1⁄4 Teaspoon|
|Ripe banana||1 Cup (16 tbs), mashed|
|Sugar||3⁄4 Cup (12 tbs)|
|Cooking oil||3 Tablespoon|
|Lemon peel||1 Teaspoon, finely shredded|
|Walnuts||1⁄4 Cup (4 tbs), chopped|
Spray an 8x4x2-inch loaf pan with non-stick coating; set pan aside.
In a large mixing bowl stir together the flour, baking powder, baking soda and salt.
In a medium mixing bowl stir together the egg whites, banana, sugar, cooking oil and lemon peel.
Add to the flour mixture, stirring just till combined.
Stir in the walnuts.
Pour the batter into the prepared pan.
Bake in a 350° oven about 50 minutes or till a wooden toothpick inserted near the center comes out clean.
Cool the bread in the pan on a wire rack for 10 minutes.
Remove bread from the pan and cool completely on the wire rack.
Wrap and store overnight before slicing.
