Fruity Tea Bread
|Strong tea||12 Tablespoon (Cold)|
|Mixed dried fruits||500 Gram (Such As Raisins, Chopped Apricots, And Sultanas)|
|Caster sugar||150 Gram|
|Egg||1 , beaten|
|Unsalted butter||30 Gram, melted|
|Plain flour||250 Gram|
|Soda bicarbonate||1 Teaspoon|
Put the tea, fruits, and sugar in a large bowl and mix together well.
Cover and set aside overnight for the fruits to soak in the tea.
The next day, lightly grease a 1kg (2 lb) loaf tin and line it with baking parchment.
Preheat the oven to 180°C/350°F/Gas 4.
Add all the remaining ingredients to the bowl of soaked fruits and stir them in well.
Spoon the mixture into the prepared loaf tin.
Bake for 1 1/2 hours, or until a skewer inserted into the centre of the loaf comes out clean.
Cool the loaf for 10 minutes in the tin, then transfer it to a wire rack to finish cooling.
