Cranberry Bread

  Vegetable oil spray 1
  Whole wheat flour 1 Cup (16 tbs)
  All purpose flour 1 Cup (16 tbs)
  Firmly packed brown sugar 2⁄3 Cup (10.67 tbs)
  Baking powder 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Ground allspice 1⁄4 Teaspoon
  Orange juice 3⁄4 Cup (12 tbs)
  Grated orange rind 1 Tablespoon
  Egg 1
  Vegetable oil 1⁄2 Cup (8 tbs) (Acceptable)
  Vanilla 2 Tablespoon
  Fresh cranberries 2 Cup (32 tbs), chopped

Preheat oven to 350° F.
Lightly spray two 7 3/8-x-3 5/8-inch loaf pans with vegetable oil.
Combine first six dry ingredients in a bowl and set aside.
In a small bowl, combine remaining ingredients and mix well.
Make a well in dry ingredients and pour in liquid mixture.
Stir just until blended.
Pour into prepared loaf pans and bake 45 to 50 minutes, or until a toothpick inserted in center comes out clean.
Remove from pans and cool on a wire rack.
