Crusty Brown Bread
|Sifted all purpose flour||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
|Corn meal||1 Cup (16 tbs)|
|Graham flour/Whole-wheat flour||1 Cup (16 tbs), stirred|
|Dark molasses||3⁄4 Cup (12 tbs)|
|Buttermilk/Sour milk||2 Cup (32 tbs)|
|Seedless raisins||1 Cup (16 tbs)|
Sift white flour with baking powder, soda, and salt; add corn meal and graham flour.
Add remaining ingredients; beat well.
Half-fill 5 greased 1-pound baking-powder cans;* cover tightly.
Place on rack in deep kettle; pour in boiling water to 1 inch.
Cover kettle; steam 3 hours, adding more boiling water if needed.
Uncover cans; place in very hot oven (450°) 5 minutes; remove bread from cans.
