Bread Salad

Leftover bread suddenly becomes glamorous in this fresh veggie and vinaigrette salad.
Ingredients
  Day old french bread slices/Italian bread 6 (1 inch thick)
  Tomatoes 2 Medium, chopped (1 1/2 cups)
  Cucumber 1 Medium, chopped (peeled 1 1/4 cups)
  Onion 1 Small, thinly sliced
  Fat free red wine vinegar dressing 1⁄3 Cup (5.33 tbs)
  Chopped basil leaves/2 teaspoons dried basil leaves 2 Tablespoon
  Pepper 1⁄4 Teaspoon
Directions

1. Tear bread into 1-inch pieces. Mix bread and remaining ingredients in glass or plastic bowl.
2. Cover and refrigerate, stirring once, at least 1 hour to blend flavors and soften bread. Stir before serving.
