Huckleberry Nut Bread
|Flour||2 Cup (32 tbs)|
|Baking powder||1 Teaspoon|
|Huckleberries||1 1⁄2 Cup (24 tbs)|
|Walnuts||1⁄2 Cup (8 tbs), chopped|
|Maple syrup||10 Tablespoon (1/2 Cup Plus 2 Tablespoon)|
|Eggs||2 , beaten|
|Margarine||3⁄4 Cup (12 tbs), melted|
Sift together first three ingredients.
In separate bowl, beat together syrup, eggs and margarine.
Fold in berries and nuts.
Mix the dry ingredients.
Butter two bread loaf pans and line with waxed paper.
Spoon huckleberry mixture into pans.
Bake 325°F.60 to 70 minutes.
