Ham And Cheese Bread Bake

  Unsalted butter/Margarine 1 Tablespoon
  Yellow onion 1 Medium, finely chopped
  Asparagus tips/Chopped broccoli / green peas 10 Ounce, frozen, thawed and drained (1 Package)
  Baked ham/Boiled ham 1 Pound, cut into 1-inch cubes
  Whole wheat bread slice 4 , cut into 1-inch squares
  Eggs 3 Large
  Egg white 1 Large
  Milk 2 Cup (32 tbs)
  Shredded monterey jack cheese/Shredded cheddar cheese 4 Ounce (1 Cup)
  Salt 1⁄2 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Dijon mustard 1 Tablespoon

Preheat the oven to 350° F.
Melt the butter in a 12-inch nonstick skillet over moderate heat.
Add the onion and saute, stirring, for 2 to 3 minutes or until slightly softened.
Add the asparagus tips and cook, stirring, for 2 minutes.
Add the ham and bread and toss to mix.
Set aside.
In a large bowl, beat the eggs and egg white with the milk, all but 2 tablespoons of the cheese, the salt, pepper, and mustard, just enough to combine.
Stir in the skillet mixture.
Pour all into a greased flameproof 2-quart shallow baking dish and sprinkle with the remaining cheese.
Cover with foil and bake for 30 to 35 minutes or until a knife inserted in the center comes out clean.
Transfer the dish to the broiler, and broil 4 inches from the heat for 2 minutes or until lightly golden.
