|Coconut||1⁄3 Cup (5.33 tbs), shredded|
|All purpose flour||1⁄2 Cup (8 tbs) (sifted)|
|Cayenne pepper||1 Pinch|
|Fat||1⁄4 Cup (4 tbs) (For frying)|
Place the coconut, salt, flour, pepper and the sugar in a bowl.
Work in about 3 tablespoons water to mix the ingredients to a fairly firm dough.
Divide into 6 small pieces and roll each out to a round about 3 inches in diameter.
Heat the fat in a large frying pan and fry the coconut cakes gently until they are light brown on both sides.
