Walnut & Banana Bread
|Soft margarine||150 Gram (1/2 Cup Plus 2 Tablespoons)|
|Packed brown sugar||160 Gram (3/4 Cup)|
|Vanilla extract||1⁄4 Teaspoon|
|Whole wheat flour||275 Gram (2 Cups)|
|Baking powder||2 Teaspoon|
|Chopped walnuts||100 Gram (1 Cup)|
In a medium bowl, cream margarine and sugar until pale and fluffy.
Beat in eggs.
Peel bananas; mash with a fork, or process in a blender.
Stir banana pulp and vanilla into creamed mixture.
Combine flour, baking powder, salt and walnuts.
Fold into creamed mixture with milk.
Turn batter into greased loaf pan; smooth the surface.
Bake 1-1/4 hours or until a skewer inserted in center comes out clean.
Turn out loaf onto a rack to cool.
