Pineapple Nut Bread
|Flour||2 1⁄4 Cup (36 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Baking powder||3 Teaspoon|
|Bran cereal||1 Cup (16 tbs)|
|Egg||1 , beaten|
|Crushed pineapple||1 1⁄2 Cup (24 tbs) (Undrained)|
|Melted butter||3 Tablespoon|
|Chopped walnuts/Pecans||3⁄4 Cup (12 tbs) (Only Meat)|
Sift flour, measure, then sift again with sugar, baking powder, soda, and salt into a mixing bowl.
Stir in cereal, beaten egg, pineapple, and melted butter, and mix just until blended.
Fold in nut meats.
Turn into a greased 9 by 5-inch loaf pan.
Bake in a moderate oven (350°) for about 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean.
Let cool slightly before slicing.
