  Flour 2 1⁄2 Cup (40 tbs)
  Active dry yeast 1⁄2 Tablespoon
  Grated lemon peel 1⁄2 Teaspoon
  Potato water 1⁄2 Cup (8 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Unsalted butter 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Egg 1
  Boiled mashed potato 1⁄3 Cup (5.33 tbs) (Water Reserved)
  Golden raisins 1⁄3 Cup (5.33 tbs)
  Chopped mixed candied fruit 2⁄3 Cup (10.67 tbs)
  Glaze 1 Tablespoon
  Egg 1 , beaten
  Water 1 Tablespoon

1 Combine 1 1/2 cups flour, yeast, and lemon peel in mixing bowl. Heat potato water, sugar, butter, and salt to hot (120°-130°F). Add to dry ingredients. Mix thoroughly.
2 Add egg and mashed potato to the dry ingredients. Mix thoroughly.
3 Add raisins, candied fruit, and enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth€”about 10 minutes.
4 Place in greased bowl, turning to coat top. Cover; let rise in warm place until double€”about 1 hour.
5 Punch down dough. Shape into a ball; place in greased 8-inch round pan.
6 Cover; let rise until double€”about 30€”45 minutes. Make glaze and brush on loaf.
7 Bake in a preheated 350°F oven 60 minutes or until done. Cool on wire rack.
