Ingredients
  Eggs 3 , slightly beaten
  Oil 180 Milliliter (3/4 Cup)
  Maple syrup 240 Milliliter (1 Cup)
  Zucchini 590 Milliliter, grated (2 1/2 Cups)
  Vanilla 15 Milliliter (1 Tablespoon)
  Whole wheat pastry flour 720 Milliliter (3 Cups)
  Jerusalem artichoke flour 40 Milliliter (2 1/2 Tablespoons)
  Salt 1 Teaspoon (5 Milliliter)
  Baking soda 1 Teaspoon (5 Milliliter)
  Baking powder 1⁄4 Teaspoon (1 Milliliter)
  Cinnamon 1 Teaspoon (15 Milliliter)
  Nuts 120 Milliliter, chopped (1/2 Cup)
Directions

Combine eggs, oil, syrup, zucchini and vanilla.
Sift flours, salt, soda, baking powder and cinnamon.
Add nuts to dry ingredients.
Then add liquid ingredients.
Divide batter into two.
Bake in greased, floured loaf pans at 300°F (150°C) for 75 minute;}.
