Fruit 'N' Wheat Banana Bread

|Currants||120 Milliliter (1/2 Cup)|
|Whole wheat pastry flour||480 Milliliter (2 Cup)|
|Cinnamon||1 Teaspoon (5 Milliliter)|
|Salt||1⁄4 Teaspoon (1 Milliliter)|
|Baking soda||3⁄4 Teaspoon (4 Milliliter)|
|Mashed banana||295 Milliliter (1 1/4 Cup)|
|Grated lemon zest||295 Milliliter (1 1/4 Cup)|
|Lemon juice||295 Milliliter (1 1/4 Cup)|
|Maple syrup||120 Milliliter (1/2 Cup)|
|Canola oil||60 Milliliter (1/4 Cup)|
Preheat oven to 350°F (180°C).
Combine cereal and currants in a large mixing bowl.
Sift together flour, cinnamon, salt and baking soda.
Add to mixing bowl.
Place mashed bananas in a small bowl.
Add rind and lemon juice, maple syrup and canola oil.
Add wet ingredients to dry ingredients, stirring to combine gently.
Pour batter into oiled 9-inch loaf pan and bake for 40-50 minutes or until toothpick comes out clean.
