Orange Quick Bread
|Non-stick cooking spray||2 Tablespoon|
|Quick bread mix||3 Cup (48 tbs)|
|Orange juice||3⁄4 Cup (12 tbs)|
|Sour cream||1⁄4 Cup (4 tbs)|
|Grated orange rind||1 Large|
Preheat the oven to 325°F.
Lightly spray a 9 1/4x 5 1/4x 2 3/4 loaf pan with the cooking spray and set aside.
Place the Quick Bread Mix in a large bowl.
In a 2 cup glass measuring cup, combine the orange juice, sour cream, egg, and orange rind.
Add to the bread mix all at once and stir just until moistened (the batter will be lumpy).
Pour the batter into the loaf pan.
Bake for 1 hour or until a toothpick inserted in the center of the loaf comes out clean.
Cool the bread upright in its pan on a wire rack for 10 minutes.
Using a knife, loosen the loaf around the edges, then turn out onto the rack and cool to room temperature before cutting.
