Healthy Banana Bread

Ingredients
  All purpose flour 2 1⁄4 Cup (36 tbs)
  Baking powder 1 Teaspoon
  Soda 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Coarsely chopped nuts 1⁄2 Cup (8 tbs)
  Shortening 1⁄3 Cup (5.33 tbs)
  Sugar 2⁄3 Cup (10.67 tbs)
  Eggs 2
  Mashed fully ripened bananas 2⁄3 Cup (10.67 tbs)
  Buttermilk/Water 1⁄4 Cup (4 tbs)
Directions

Sift flour, measure, and sift again with the baking powder, soda, and salt.
Add the nuts.
In another bowl, cream shortening and sugar until light and fluffy.
Beat in eggs, one at a time.
Blend in banana pulp.
Add flour mixture and liquid alternately, beating until smooth.
Pour into a well-greased and floured loaf pan.
Bake on the center rack in a 350° oven about 1 hour.
Remove from pan and cool on rack.
