Toasted Bread With Chicken-Liver Paste
|Butter||1⁄4 Cup (4 tbs)|
|Garlic||2 Clove (10 gm), finely chopped|
|Onion||1 Small, finely chopped|
|Chicken livers||10 , finely chopped|
|Sage leaves||4 , chopped or crumbled (Fresh Or Dried)|
|Capers||2 Tablespoon, chopped|
|Flat anchovy fillets||3 , chopped|
|Thick italian bread slices||10|
|Freshly ground pepper||To Taste|
Melt butter in a small saucepan.
When butter foams, add garlic and onion.
Saute over medium heat until golden.
Add chicken livers.
Saute over medium heat 3 to 5 minutes or until lightly browned.
Add salt and pepper, sage, capers and anchovies.
Mix well; set aside.
Toast bread until golden on both sides.
Spread liver paste over 1 side of toasted bread, mashing it slightly as it is spread.
Place on a platter.
