Gold Rush Quick Bread
|Bread mix||1 (pillsbury nut quick)|
|Carrots||1 Cup (16 tbs), shredded|
|Lemon peel||1⁄2 Teaspoon, grated|
|Orange juice||3⁄4 Cup (12 tbs)|
Heat oven to 350°F.
Generously grease and lightly flour bottom only of 8x4 or 9x5 inch loaf pan.
In large bowl, combine all ingredients; stir 50 to 75 strokes until dry particles are moistened.
Pour into greased and floured pan.
Bake at 350°F. for 50 to 60 minutes or until toothpick inserted in center comes out clean.
Cool 15 minutes; remove from pan.
Cool completely before slicing.
Wrap tightly; store in refrigerator.
