Vegetable Bread Patties

  Bread slice 4
  Green beans 5 , finely chopped
  Potato 1 , finely chopped
  Peas 1⁄4 Cup (4 tbs)
  Carrot 1 , finely chopped
  Oil 2 Tablespoon
  Finely chopped ginger 1⁄2 Teaspoon
  Lemon juice 1 Teaspoon
  Chopped coriander 2 Tablespoon (Otherwise Called Cilantro)
  Salt 1 Teaspoon
  Red chili powder 1⁄4 Teaspoon
  Pepper 1⁄2 Teaspoon

Heat oil.
Add ginger.
When it turns golden, add vegetables and cook covered for 5-7 minutes till done.
Occasionally sprinkle water, to prevent the vegetables from burning.
Add finely chopped coriander, salt, red chilli powder and pepper.
Cook for 1/2 minute on low heat.
Remove from heat.
Add lemon juice and mix well.
Cool the mixture.
Cut sides of bread.
Dip in water kept in a flat bowl and remove from water immediately.
Keep it flat on the palm.
Press bread carefully, keeping it flat on the palm, to squeeze out water.
Put 1 tbsp of prepared vegetables in the centre of the wet bread.
Cover with the sides of bread.
Press well to give it a neat shape and seal on all sides by pressing.
At serving time, deep fry in hot oil to a light brown colour.
As soon as the patty is put in oil, remember not to touch it with the frying spoon immediately.
Turn after a while when it starts to change colour.
Fry 2-3 pieces at a time.
Drain on paper.
