Allergy Free Banana Bread
|Rice flour||1 Cup (16 tbs)|
|Soya flour||1⁄2 Cup (8 tbs)|
|Cereal free baking powder||2 Teaspoon|
|Ripe bananas||2 Medium|
|Peanut oil||4 Tablespoon (Use Planters)|
|Sugar||3⁄4 Cup (12 tbs)|
|Chopped walnuts||3⁄4 Cup (12 tbs)|
Preheat oven to 350°.
Mix rice flower, soya flour, tapioca and baking powder in a bowl.
In a blender, mix bananas with oil, sugar, salt and eggs.
Combine this mixture with dry ingredients.
Mix until just blended.
Turn into a loaf pan 8" x 4" which has been well oiled.
Bake at 350° for 1 hour.
Walnuts may be added if desired.
