Cinnamon Soda Bread
|Whole wheat flour||1 1⁄2 Cup (24 tbs)|
|All purpose flour||1 Cup (16 tbs)|
|Rolled oats||1⁄2 Cup (8 tbs), uncooked|
|Sugar||1⁄4 Cup (4 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Ground cinnamon||1⁄4 Teaspoon|
|Raisins||1⁄3 Cup (5.33 tbs)|
|Walnuts||1⁄4 Cup (4 tbs)|
|Low fat buttermilk||1 1⁄4 Cup (20 tbs)|
|Vegetable oil||1 Tablespoon|
Preheat oven to 375°F.
Stir together flours, oats, sugar, baking powder, baking soda and cinnamon in large bowl.
Stir in raisins and walnuts, if desired.
Gradually stir in buttermilk and oil until dough forms.
Knead in bowl for 30 seconds.
Spray loaf pan with nonstick cooking spray; turn dough into pan.
Bake 40 to 50 minutes until knife inserted in center comes out clean.
