Zucchini Bread

Ingredients
  Eggs 3
  Oil 1 Cup (16 tbs)
  Sugar 2 Cup (32 tbs)
  Zucchini 2 Cup (32 tbs), peeled and chopped
  Vanilla 3 Teaspoon
  Flour 3 Cup (48 tbs)
  Salt 1 Teaspoon
  Baking soda 1 Teaspoon
  Cinnamon 3 Teaspoon
  Baking powder 1⁄4 Teaspoon
  Nuts/Raisins / both 1 Tablespoon (adjust quantity as needed)
Directions

Beat eggs until light and foamy.
Add oil, sugar, zucchini and vanilla.
Mix dry ingredients lightly.
Add nuts, raisins or both.
Pour into 2 greased loaf pans and bake at 325-350° for 1 hour 10 minutes (depending on your oven).
Bake at 350° for 45 minutes.
