Solar Cooked Pumpkin And Nut Bread

Baking is always fun. Making simple and flavorful recipes is enjoyable task. Pumpkin bread with pecans is one such recipe. Making it in solar cooker is much more exciting.
Ingredients
  All purpose flour 4 Cup (64 tbs)
  Pumpkin pie spice 1 Tablespoon
  Baking powder 2 Teaspoon
  Baking soda 1 Teaspoon
  Salt 3⁄4 Teaspoon
  Pure pumpkin 15 Ounce
  Packed brown sugar 2 Cup (32 tbs)
  Apple juice 1 Cup (16 tbs)
  Eggs 4 Large
  Vegetable oil 1⁄4 Cup (4 tbs)
  Vanilla extract 2 Teaspoon
  Chopped nuts 1 Cup (16 tbs) (Divided)
Directions

PREHEAT oven to 350° F. Grease two 9 x 5-inch loaf pans.

SIFT flour, pumpkin pie spice, baking powder, baking soda and salt into medium bowl. Combine pumpkin, sugar, Juicy Juice, eggs, oil and vanilla extract in large bowl; stir well. Stir in flour mixture and 3/4 cup nuts just until moistened. Spoon into prepared loaf pans. Sprinkle remaining 1/4 cup nuts over top of loaves.

BAKE for 60 to 70 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

Baking is fun! Especially if you love to bake! This pumpkin bread is made using the solar cooker and the texture comes out very well. Though this video is without an audio those who could figure it out can give it a watch
