Blueberry Banana Nut Bread
|Pancake mix||2 Cup (32 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Chopped pecans||1⁄2 Cup (8 tbs)|
|Egg||1 , beaten|
|Drained canned blueberries||1⁄4 Cup (4 tbs)|
|Mashed bananas||1 Cup (16 tbs) (About 2 Medium-Sized With All Yellow/ Brown Flecked Peel)|
|Melted shortening||1⁄4 Cup (4 tbs)|
Mix pancake mix, sugar, baking powder, and pecans in a bowl; set aside.
Combine egg, blueberries, bananas, milk, and shortening.
Add to dry ingredients; stir only enough to moisten dry ingredients.
Turn into a greased 9x5x3-inch loaf pan and spread evenly.
Bake at 350°F about 35 minutes, or until bread tests done.
Cool 10 minutes in pan on wire rack.
Remove from pan and cool completely.
