Homemade Bran Bread
|Flour||2 Cup (32 tbs), unsifted|
|Baking powder||2 Teaspoon|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Bran flakes||1 Cup (16 tbs)|
|Nuts||1⁄2 Cup (8 tbs), chopped|
|Whole egg||1 , beaten|
|Buttermilk||1⁄4 Cup (4 tbs)|
|Shortening||3 Tablespoon, melted|
|Zucchini||1 Cup (16 tbs), diced|
Mix together flour, baking powder, salt, soda, sugar, and allspice; add bran flakes and nuts.
Combine egg with buttermilk and melted shortening; add to dry ingredients and beat just enough to mix well.
Stir in zucchini.
Bake in greased and floured 9 x 5 x 3 inch loaf pan at 350° approximately 50 to 60 minutes.
A very moist bread; cuts best when cool.
