The word barbecue comes from the West Indies word “barbacoa” which means – to slow cook meat over hot coals. Hence barbecue is meat or vegetables which have been slow cooked over hot coals, to lend a smoked flavour, taste and juicy tenderness to the food cooked.
The website covers various cuts of meat, techniques, recipes, barbeque festivals, its history and equipment or restaurant reviews. They hava a newsletter called “The Barbecue Gazette”.
